I am somewhat of a chocoholic and a rich, decadent brownie is my idea of chocolate heaven. Yes there is a lot of chocolate, butter and quite a bit of sugar involved here but you wouldn’t eat these everyday. Life is not worth living if there’s never room for a brownie.

You may think that are complicated to make but nothing could be further from the truth. In fact, they are one of the simplest things to bake and don’t require many ingredients.

I’ve stuck to tradition here and studded them with walnuts but I so often change them up. Brownies are incredibly versatile so use whatever you fancy: maybe some more chocolate chips, a few swirls of peanut butter or keep them plain. All options are good.

My go-to brownie recipe which I’ve tweaked slightly from Feast by Nigella Lawson.

CHOCOLATE MOUSSE

INGREDIENTS:

  1. 3 eggs
  2. 125 g/4-5 ounces of dark chocolate
  3. 10 g/0.3 ounces of unsalted butter
  4. 1/2 cup cream – full fat
  5. 3 tbsp caster sugar
  6. Chocolate shavings.
  7. Whipped cream (optional)

INSTRUCTIONS:

  1. Separate eggs and yolks while eggs are cold. Place whites in a large bowl and yolks in a small bowl. Leave whites while you prepare other ingredients.
  2. Whisk the yolks.
  3. Melt the chocolate and butter. Place the chocolate and butter in a bowl. Melt in the microwave in 30 seconds bursts. Stirring in between until smooth. Set aside to cool down.
  4. Beat the cream until “stiff peak” has been reached.
  5. Whip the whites and add sugar.
  6. Fold the egg yolks into cream 8 times.
  7. If the chocolate is not runny then run it in the microwave.
  8. Pour the chocolate into cream yolk mixture. Fold it for 8 times.
