Classic Manicotti Recipe — DiscoverNet

If you were to type the word “manicotti” into Google Translate, the Italian to English translation would be something along the lines of “little sleeves.” And, as it turns out, this literal translation is pretty fitting, and manicotti pasta really is composed of tiny little sleeves, tubes, or whatever you wish to call them. And, […]

Chicken Marsala Pasta

Aly Eats Food

This is a twist on the classic chicken marsala but is way more delicious in my opinion. It took me a few attempts to get this recipe just right – they first I used spaghetti noodles and it just didn’t work well – the noodles almost soaked up all of the creamy, mushroomy sauce. Initially I also didn’t coat and pan fry the chicken, but this really turned the dish up a notch and didn’t take much more time to do. This dish was like a warm hug on a cold night and I couldn’t get enough of it. This dish has all the classics – mushrooms, marsala wine, and of course chicken, just a fun twist! The breaded and pan fried chicken really makes this dish – I love the crispness that comes through and pairs perfectly with the soft mushrooms and creamy sauce. I could definitely eat this…

Homemade Ricotta Cheese

Absolutely looks delicious!

The Gastronomy Gal

This creamy ricotta cheese is so simple to make and can be used in so many dishes!

Making homemade ricotta cheese is as easy as 1, 2, 3. Literally! All you need is 3 ingredients, and you can have creamy and delicious ricotta cheese in under 40 minutes. I use the cheese to spread on bread, in homemade ravioli and lasagna, and in ricotta cookies, but there are so many other uses for ricotta such as salads and sandwiches!

The ricotta-making process is like a science experiment, so this may be a good recipe to include kids on. When you add acid to milk (or in my case half and half), it curdles and separates into casein and whey. This occurs because adding acid to milk lowers the milk’s pH, causing the milk proteins to unwind and clump together into curds. You are left with an opaque liquid (whey) and…

Garlic Anchovy Pasta

Carter Family Recipes

In Italian cooking, anchovies are extremely common. They don’t add so much of a “fishy” taste as much as a salty, umami punch of flavor. For that, I always keep anchovy paste, oilorfiletson hand to give pasta dishes like this a boost of flavor.

This is a great pasta that I consider a “pantry pasta” – you can use virtually any greens you have on hand, whether it be arugula, baby kale, or the called-for spinach. It’s the kind of dish I almost always have everything on hand to throw together.

I love the kick of heat that the red pepper flakes give this dish, but if you’re not partial to spice, start with a smaller amount.

Ingredients

  • 1 pound short pasta, such as Fiorentini, Strozzapreti or Farfalle
  • 1/2 cup extra-virgin olive oil
  • 1 tablespoon anchovy paste or 4-6 anchovy filets diced small, such as Armatore
  • 1/2 teaspoon crushed red pepper flakes
  • 3 cloves garlic finely chopped
  • 5 cups baby spinach…

Italian Sausage Pasta

Ingredients:

  • 3-4 garlic cloves, minced
  • ½ onion, chopped
  • Sweet peppers, chopped
  • 1 lb. ground sausage

  • Salt
  • black and white pepper
  • Poultry seasoning

  • Oregano
  • Basil
  • Parmesan cheese

Heat a pan with EVOO. I like to use a wide pan to allow the sauce to simmer evenly as well as be able to stir and add my pasta into the sauce. First add the ground sausage and let it brown. Season it with salt, black pepper, poultry seasoning and oregano. Allow the meat to brown and break it up into smaller pieces. Next added the chopped onions and peppers, After a few minutes, then add the garlic. You want to add it early enough to add flavor but not…
