Chicken Parm Meatballs

Ingredients:

16 oz pasta (fettucine in the picture)

30 0z pasta sauce

1 pound ground chicken

1/2 cups Panko

1/3 cup grated Parmesan cheese

1/4 teaspoon garlic powder

1/2 teaspoon dried basil

1/2 teaspoon dried oregano

1/4 teaspoon salt

1/4 teaspoon black pepper

1 large egg

2 tablespoons cooking oil

Instructions:

Combine the Panko and seasoning (Parmesan cheese, garlic powder, basil, oregano, salt, and pepper) into a small bowl and stir.

Place the ground chicken in a large bowl. Add the Panko/seasoning mixture to the chicken, along with the egg. Evenly distribute the contents by hand.

Shape the combined mixture into meatballs.

Heat 1 tablespoon of cooking oil in a large skillet over medium heat.

Once skillet is hot, add half the meatballs. Cook meatballs for one minute each side (6 sides) until browned and completely cooked through.

Transfer the cooked meatballs to a clean plate.

Repeat with the other half of meatballs.

While meatballs are cooking, boil water in a large pot and cook the pasta for 7-10 minutes. Drain when cooked.

Add the sauce to a medium sauce pot and heat over medium-low. Stir occasionally.

Add all meatballs to the heated pasta sauce and stir.

Pour meatballs and sauce to the drained pasta and stir.

Pizza di Ricotta Recipe

Authentic Italian Recipes from Nonna Box

The Apulian tradition is rich in desserts with inimitable taste. When Easter approaches in Puglia, it is traditional to prepare pizza di ricotta.

This shortcrust pie — essentially a ricotta-based cheesecake — is usually filled with ricotta, chocolate chips, and candied fruit. Of course, this dessert is delicious every day of the year and is excellent when served for afternoon tea or breakfast.

Pizza di ricotta is a typical recipe of Apulian grandmothers, and it cannot be missing from the Easter table. This easy-to-make pie is soft and fragrant like few other desserts.

Here is the traditional recipe to save for next Easter or prepare whenever you wish.

Penne alla Vodka

Another idea for me! I love this food!

The Corporate Cookbook

About This Recipe:

What is there really to say about penne alla vodka? It’s insanely decadent and delicious, a fan favorite, and very easy to make. This is the perfect dish to make for a group of friends because I have yet to find someone who does not like penne alla vodka. It also reheats pretty well so you can make it ahead of time (just cook the pasta super al dente so it does not become mushy later,) and it is vegetarian friendly. Just pair it with some roasted vegetables or a side salad, and you are set for dinner!

Enjoy!

-1 lb penne
-1 small onion, finely diced
-4 garlic cloves, finely minced
-1/2 cup tomato paste
-1 tsp dried oregano
-1 tsp crushed red pepper flakes
-1/4 cup vodka
-1/2 cup heavy cream
-1/2 cup grated Parmesan
-1/4 cup fresh basil, chiffonade
-Olive oil
-Salt and…
